Chân gà vốn dĩ không được ưa chuộng vì không có nhiều phần thịt để ăn, nhưng nếu biết cách chế bạn sẽ có một món ăn cực kỳ hấp dẫn. Chân gà rim tàu xì chính là một món ngon như thế!
Chân gà ngâm với nước có hòa tan 1/2 muỗng cà phê muối, rửa sạch, cho vào nồi luộc với 1 muỗng canh giấm đen chay và 1 muỗng canh đường trắng trong khoảng 3 - 5 phút. Vớt chân gà ra, ngâm trong nước đá lạnh cho sạch, để ráo.
Tỏi băm nhỏ, gừng gọt vỏ, cắt sợi.
Bắc chảo lên bếp, cho vào khoảng 3 muỗng canh dầu ăn, dùng giấy lau khô chân gà, cho vào chảo chiên vàng. Trong quá trình chiên bạn nhớ đậy nắp để tránh bị văng dầu. Gắp chân gà ra đĩa.
Pha chén nước sốt gồm: 1/2 muỗng cà phê muối, 1 muỗng canh giấm đen chay, 2 muỗng canh đường trắng, 2 muỗng canh dầu hào, 1 muỗng canh hắc xì dầu, 1/2 muỗng cà phê hạt nêm, 1/2 muỗng cà phê tiêu, 100ml nước lọc, khuấy đều. Tiếp tục dùng chảo trên, phi thơm tỏi băm, gừng. Đổ từ từ phần nước sốt đã pha vào. Cho chân gà vào, thêm hoa hồi, đinh hương vào cùng, hạ nhỏ lửa, rim cho chân gà được thấm đến khi phần sốt đặc lại còn nước sệt sệt.
Món chân gà rim tàu xì có thể dùng với cơm hoặc làm mồi nhậu cho chàng lai rai những ngày cuối tuần. Chàng rất ngưỡng mộ tài nội trợ của bạn đấy.
