Cua rửa sạch bằng nước lạnh, cho vào nồi với một ít nước lạnh, đậy kín nắp, đun lửa nhỏ đến khi cua chín. Vớt cua ra để vào đĩa để nguội, tách bỏ lấy thịt cua và gạch cua để ra riêng, giữ lại nước luộc cua (nếu có).

Đun đến khi sôi thì cho măng tây vào đun cùng khoảng 3 phút.
Cho từ từ chén bột năng vào nồi súp, dùng muỗng khuấy nhẹ tay để hỗn hợp súp sánh đặc lại, nêm nếm lại tùy theo khẩu vị.
Nhanh tay cho chén lòng trắng trứng đã đánh tan, dùng đũa khuấy nhẹ theo chiều kim đồng hồ để lòng trắng trứng gà tạo vân đẹp.
Tắt bếp, rắc một ít tiêu lên bề mặt, múc ra chén nhỏ 1-2 giọt dầu mè, dùng nóng.
